
One of the most common questions that I'm asked is, Is there any white flour in your wholemeal bread? Although I understand what is meant, it is still a question that can't exist because wholemeal is made from the whole of the wheat kernal which includes the part that the white flour comes from.

The various layers of Bran (the epidermis down to the aleurone cell). Bran is very asorbant which is very useful in helping the bodies digestive system.
The wheat germ in the bottem (this is the part that if planted would regerminate producing a new root). The wheatgerm is exceptionally high in nutrients although it only makes up about 2.5% of the whole wheat.
The Endosperm (the white powdery centre) is the part of the wheat that contains the gluten forming protiens which responsible for holding the moisture and air bubbles.
The Hairs of Brush (or beard) is removed before milling.
Wholemeal Bread or Wholewheat Bread is made from the whole of the Wheat kernal.
White Bread is made from only the white centre.
Wheatgerm Bread is made using more of the wheatgerm which is very high in nutrients.
