The flour is stoneground milled from a variety of ancient grains grown by John Letts. The unique qualities of the flour is that it has a low gluten content that is of a different nature to modern wheat. As we ferment the dough naturally the gluten is transformed into a digestable state. This all means that the bread made from this flour in the manner in which we are making it, appears to be tolerable to people with wheat / gluten intolerance.
